Recipe a la Rachel Ray

Yesterday I made my very first Rachel Ray recipe. Nate is actually the one that came across this recipe for Crispy Mashed Potato Cakes. They tasted good, although I didn't have the lemon zest or scallions, which I'm sure would have added quite a bit. And, ok, and their being just "ok" could also have something to do with the fact that I substituted fish nuggets for the fancy salmon that she made to go along with them.... ;)

Anyway...my version tasted ok, and I must say that now that I've conquered my first Rachel Ray recipe, maybe I'll try something a little more challenging (I've looked through her cookbooks before, and I don't regularly buy a lot of the ingredients her recipes call for...). Maybe.
