Cheesy Baked Eggplant

I bought an eggplant at the grocery store last week. I hadn't ever cooked one before, and I figured we Zs should have more purple vegetables...

So...I came across this recipe today, which also called for fresh spinach, which I had and was in danger of not using before it went bad. Score! Go me!

The overall consensus was we're not huge eggplant people, but for what it was, the recipe was really pretty good. I may try to alter it slightly next time and turn it into a pizza- we figured that would taste mighty yummy!
