I is for Icebox Cupcakes

Logistically, ice cream cake just wasn't going to work.

So I did some research.

It turns out there's actually a specific type of cake being referred to when people talk about an icebox cake.  Maybe you knew this already.  I did not.  I found these pictures.  I was hooked.

Voila!  Back to Joy of Baking!  She hasn't failed me yet, I'm telling you.  I used this recipe for icebox cupcakes. 

No...my cookies aren't all perfectly the same size, but I think they're kinda pretty.  ;)

And I just might be pretty proud of those little chocolate shavings...
