Menestra de lentejas

aka Slow Cooker Red Lentils.

But saying 'menestra de lentejas' makes me feel more global.  (And it almost tricks me into thinking that I'm using at least a little bit of my very expensive Spanish degree...almost.)

I found this recipe during a search for dishes that use lentils.  I didn't have every single one of the ingredients listed, so I made some substitutions, and I think it came out pretty good.

Not knowing exactly how to serve it, we ate it with rice, a la curry.  Nate and I liked it, the kids thought it was passable, and Abby LOVED it.  So there you have it. :)
